Emanuele è conosciuto da tutti come l'uomo del sale. Dopo esser partito per l'Australia nel lontano 1968 ritorna e si trasferisce a Gozo per poter pescare. Li conobbe la moglie, e con il suo supporto cominciò ad estrarre sale e venderlo. Ora che ha 75 anni del business di famiglia se ne occupa la figlia con il marito, perchè nella loro azienda non ci sono dipendenti. Sperando sempre in un tempo eccelso e non piovoso la sua attività di estrazione continua imperterrita, accompagnata dalla brezza marina.
