Discovering gastronomic cultures

Every year, the tutors of the University of Gastronomic Sciences organize 5 study trips for each class of the Undergraduate Degree. In this way the young gastronomes have an extraordinary opportunity to experience first-hand places, stories, food, products, to discover food chains and processes and to learn about the food culture of populations thousands of kilometers away.

Students face, through a sensory and multi-disciplinary approach, a wide range of issues, closely linked to food, with the aim of understanding the future scenarios of the food world.

The trips are divided into two categories: the thematic trips are dedicated to specific agri-food sectors such as coffee, pasta, fish, oil, spirits; others are regional, related to the gastronomic and cultural peculiarities of a specific geographical area of Italy and the world.

From each study trip the students bring back home unforgettable experiences, but also the testimonies collected on site for the Granaries of Memory, studying and listening to the stories of the people who inhabit their lands and hold memories and knowledge imprinted in their collective conscious. These footage, of primary importance to the construction of micro-economies and ecological tourism, contribute to the creation of an archive of the Granaries of Memory which is absolutely unique.
