Gastronomy in the old town: the story of a shawarma stand

Tugay Kartal, class of 1994, works in a kebab restaurant in Borgo Rovereto, in Alessandria. In this interview, he talks about his passion for cooking and his experience as a manager of the restaurant.

He tells of some of the dishes his shop offers: kabab and baklava. The interview closes with a recipe for a salad made of potatoes and egg.

The interview was conducted by students of the Cavour Medium School of Alessandria, for PISU and Oper Discovery Space projects.

Education on collecting memories

The archive contains the interviews collected by university and high school students in the territory of Vercelli during the manifestation “Peoples’ celebration 2014”, which was a moment of encounter and sharing among different ethnicities and cultures. The interviews investigate the themes of gastronomic knowledge, the shock of meeting other culinary styles and the rituals that go with the meals of the young participants. The research was developed within the European project Open Discovery Space.
