In this interview conducted in 2012, Loreto Pacitti, born in 1971, speaks of his work as a shepherd. Loreto Pacitti is a cheesemaker of Picinisco, a small town in Comino valley, near the border with Abruzzo region. His family raises goats and sheeps in the wildness. This produdeces the characteristic taste of pecorino Picinisco cheese; the concimato di San Vittore, a cheese spiced with different herbs such as rosemary, fennel, anise, coriander, and basil; marzolina a cheese made ??with goat's milk and food protected by Slow Food; and ricotta cheese. For several years the Pacitti family has expanded its business by purchasing the Victorian villa of Orazio Cervi, the gentleman who hosted D.H. Lawrence in Picinisco. The villa is at the moment a destination for turists.
