Bassiano ham

In this interview  conducted in 2012, Ruggerio Reggiani, born in 1956, talks about Bassiano ham. Prosciutto Bassiano S.A.S. was founded in 1964 by Astro Muratori, an old butcher from Modena, who discovered almost by accident the Lepini mountains and in particular Bassiano, a small village with medieval origins. Muratori's experience in meat processing suggested that the climate of the place was ideal for ham seasoning. So he began bringing meat  from his slaughter house in Latina toa nunnery and the town hall in Bassiano. Given the success of the salami, Astro Muratori founded the Prosciutto di Bassiano S.A.S. The company has now passed into the hands of Muratori's son in law, Ruggero Reggiani, and the daughters Luisa and Vanda Muratori. They continued the family traditions, jealously guarding the secrets handed down by the founder.
