
Ernestina Amendola
The cooking of grace
Ernestina Amendola is the owner of the restaurant “Le taverne” in Acciaroli (Pollica), a small town located in the National Park of Cilento.
Ernestina provides a traditional cooking, based on the land products. This cuisine is only made by women, including her old mother, who is 90, and her aunt. They gracefully prepare some dishes for the restaurant guests.
In the video, she demonstrates how to prepare the eggplants balls. Her grandma used to cook them for her when she was a child; kneading and cuddling the dough, finally she served the ballsin a big pan, dressed with tomato sauce and homemade bread.
The Mediterranean diet is not a recent trend for Ernestina, since it is the dietary model that she has learned living in Cilento; for the elder inhabitants of Cilento, to eat the vegetables of the season is a habit.
She remembers very well the commitment of the fisherman mayor Angelo Vassallo in spreading the food culture of Cilento.
