In this interview conducted in 2012, Paola Orsini, born in 1966, presents her firm and its history. As she exaplains:

"The history of the company that bears my name began more than a century ago. It tells the love for this land of olive trees; an affection that I learned from my grandfather Umberto and my father Edoardo, and share with my husband Paolo and our little daughter Anna Silvia. We take care of ten thousand cultivar Itrana olive trees that are at least two centuries. The plants enhance the Lepini's mountain landscape, with almond, citrus and other Mediterranean trees that dwell on these small hills, facing the Tyrrhenian Sea.

I chose organic farming because I believe that to presere what we have received as a gift from the past is the first step towards modernity.We cultivate in accordance with the laws of nature and gather the fruits directly from the trees. The pressing of the olives takes place in the family oil mill when the fruits are just harvested. With two innovative decanter we extract the oil without the aid of any centrifugal separator, which could alter the physical, chemical and organoleptic characteristics of the oil. Our method produces high quality oil and a rich bouquet of aromas and flavors that will keep for a long time. "
