The Polacca of Aversa: a brioche for a breakfast out of the ordinary

On the search for origins and the secrets of the Polacca of Aversa: Interview with Silvia Pelosi of Pelosi's pastry. Aversa is a Norman town of Terra di Lavoro known for buffalo mozzarella, wine asprinio and Polacca.

The polacca, which can be enjoyed exclusively on the territory aversano bases its origins in history and legend. It is said that a nun from Eastern Europe came to Aversa revealing the recipe for this brioche, whose name would inspire you to the origins of the nun, there are those who says it's a reworking of a dessert of Puglia. It is a bundle of brioche filled with pastry cream that for the production of the Pelosi family since 1919, contains a single black cherry. It is cooked in the oven and the grains of sugar create a sort of small crispy crust. The polacca also has the form of notes footwear, the so-called ankle boots, which symbolize one of the most highly developed industrial areas of the city of Aversa: crafts footwear.

The peculiarity is that only the neighbors know about this product, which is fully cooked breakfast Aversa, while in the other cities of Campania and not, its existence is almost unknown.

The polacca seen in recent times new variants as in the case of pastry Pelosi, the Melacca based custard apple annurca (a red apple typical of Campania).
