Of truffles and dogs

Fabrizio Fia, clase 1970 is a truffle hunter who learned this passion from his grandfather. 
The relationship between truffle hunter and and dog is the focus of the interview. Fabrizio Fia describes the main techniques of training dogs from the early stages of life of the animals. The dogs are trained to search playing with biscuits, croquettes and cheese, before being taken to the woods to discover the truffles. The same seeker is often the trainer of these animals that guide the hunt.

Fabrizio Fia also tells of other research techniques, such as the one with the stick, and how the phases of the moon guide the hunt.

The white truffle

The archive investigates white truffles, known for their taste and frivolous aspects, but not for their cultural characteristics which plasmed generations of truffle hunters. The research presents a substrate of knowledge documented through dozens of interviews: historical and anthropological elements, rituals and myths on this prized fungus, still considered nowadays a nocturnal mystery. The project was promoted by the University of Gastronomic Sciences, l’Athe National Association “Città del Tartufo”, the national centre for truffle research and the Cassa di Risparmio di Cuneo Foundation.
