Aldo Alessandria

 Aldo Alessandria, born in 1968, is a modern truffle hunter and his family hunt truffles in the Langhe hills. His father was not a truffle hunter. Aldo Alessandria learned everything from his uncle.
It has many dogs who trains himself. It has had different breeds, even the mutts, but for him, the race is of little importance because the relationship that one has with his dog is the most important thing in the hunt. 
He explains the link between season and hunting explaining that it is better a cold weather because the dog sniffs closer to the soil. Moreover he highlights that as great as the passion can be one must always work in order to protect the environment and the trees.

The interview was conducted by Jacqueline Cavazza, Valeria Dogliotti and Odile Pécoud as part of a research ethnobiological coordinated by prof. Andrea Pieroni at the University of Gastronomic Sciences.

The white truffle

The archive investigates white truffles, known for their taste and frivolous aspects, but not for their cultural characteristics which plasmed generations of truffle hunters. The research presents a substrate of knowledge documented through dozens of interviews: historical and anthropological elements, rituals and myths on this prized fungus, still considered nowadays a nocturnal mystery. The project was promoted by the University of Gastronomic Sciences, l’Athe National Association “Città del Tartufo”, the national centre for truffle research and the Cassa di Risparmio di Cuneo Foundation.
