Truffle, dogs and training

Giovanni Monchiero, born in 1963, works in Roddi (Cuneo). He runs the University of truffle dogs, founded by his great-grandfather Antonio in 1880. He explains the activities of the center. Normally the basic course lasts 15-20 days and the development of a fundamental relationship between trainer and the animal is key for the success of the training.
He compares the use of a dog with the one of a pig or the truffle flies and their limits. Then he explains the role of moon phases and weather conditions for the presence of truffles. He describes the legal restriction one truffle hunter must cope with.
 
This testimony was collected in 2014. In the "Granaries of Memory" is available a previous testimony dating back to 2011.

The white truffle

The archive investigates white truffles, known for their taste and frivolous aspects, but not for their cultural characteristics which plasmed generations of truffle hunters. The research presents a substrate of knowledge documented through dozens of interviews: historical and anthropological elements, rituals and myths on this prized fungus, still considered nowadays a nocturnal mystery. The project was promoted by the University of Gastronomic Sciences, l’Athe National Association “Città del Tartufo”, the national centre for truffle research and the Cassa di Risparmio di Cuneo Foundation.
