Paola Manfredi

The only hobby

 Paola Manfredi, born in 1967 in Marsaglia, lives in Murazzano with her family which runs a farm. The truffle hunt is her only hobby. He learned it from his father, in the 1980s, and then she started over in 1999, once married and with children.

In the interview she talks about her story, explaining how one hunts the truffles and the importance of the dog in the hunt. In particular tells of her bond with her dogs, from the first one, lived for 14 years, to the other she had.

She touches on some elements of the local folklore, proverbs and the legend of witches, highlighting that for her the fear arises from concrete things, the dark, wild boars and wolves, and therefore she prefers truffle hunting during the day rather than at night.

The white truffle

The archive investigates white truffles, known for their taste and frivolous aspects, but not for their cultural characteristics which plasmed generations of truffle hunters. The research presents a substrate of knowledge documented through dozens of interviews: historical and anthropological elements, rituals and myths on this prized fungus, still considered nowadays a nocturnal mystery. The project was promoted by the University of Gastronomic Sciences, l’Athe National Association “Città del Tartufo”, the national centre for truffle research and the Cassa di Risparmio di Cuneo Foundation.
