The Cook of Trattoria Mollo

 Santina Ricca, born in 1946, works as a cook at "Trattoria Mollo" restaurant since 1967 in Torresina , a small village in the Langa. First with the mother-in-law and now the daughter she prepares traditional Piedmontese dishes. The main dishes are mixed fry, ravioli, tagliatelle pasta. During autumn she does not miss the white truffles that goes well with raw meat , fried egg or noodles. A great attention is paid to the territory where they are purchased fruit, vegetables, rabbits and chickensfrom local farmers.

The restaurant is a place to celebrate with a meal: family dinners, weddings, parties of conscripts. It is also where people of the area, especially in winter, meet just to play a game of cards.

The white truffle

The archive investigates white truffles, known for their taste and frivolous aspects, but not for their cultural characteristics which plasmed generations of truffle hunters. The research presents a substrate of knowledge documented through dozens of interviews: historical and anthropological elements, rituals and myths on this prized fungus, still considered nowadays a nocturnal mystery. The project was promoted by the University of Gastronomic Sciences, l’Athe National Association “Città del Tartufo”, the national centre for truffle research and the Cassa di Risparmio di Cuneo Foundation.
