He remembers an old man who produced the Parmigiano Reggiano and his 'magic'.
He evokes the landscape of his happy childhood in contact with the countryside, and stresses the importance of knowing how to make better use of scarce resources and the know-how belonging to the peasant culture.
He talks of aspect of the past ways of living and producing in the countryside, and ends the interview talking about his experience in Terra Madre and Slow Food movement.
