Torre Collina Farm and the food communities of Fagiolana di Torza
Daria Giorgi of Volterra is the owner of Collina Torre farm and the chief of the food communities of Fagiolana di Torza. Her company is located in a hilly area of the Val di Vara, at 400-500 m. above the sea level. The land is used for vegetable and chestnut production.The company recovers ancient varieties of local beans (including Fagiolana of Torza) and some old varieties of apples, such as Musona, the Stolla, Carla, Ruggine.
Interviewed by the students of the University of Gastronomic Sciences, Daria talks about her farm, the food communities and the history of Fagiolana. She stresses the importance of the return of young people to agriculture, the role of farm markets and seasonality. She also explains the problems of organic farming.
