
Margieva Goulnara
The Siberian gastronomy in Greece
Margieva Goulnara has Siberian background. He moved to Thessoloniki in the 1980s where she open a Russian restaurant.
She was interviewed by the students of the University of Gastronomic Sciences in 2013, during their study trip in Greece. In the interview she tells the history of her restaurant and her personal history.
Moreover, Margieva speaks of the Russian community in Thessaloniki and the Georgians, who are the 10% of the city population.
In the final part of the interview, she explains some particularities of the Siberian cousine, such as the use of bear meat, an ingredient that is difficult to find in Greece.
