The sounds of truffle

 Sergio Cauda, born in 1951, is a musician and a truffle hunter of Cisterna d'Asti. In the interview Sergio Cauda explains how his passion for truffle hunting was born almost by accident when he was a young man, following the experience of other hunters in the area. This hobby has grown into a job.

By training their dogs he has consolidated its mastery, learning new techniques, such as the search with the stick. In the interview, Sergio Cauda vividly explains this technique, its secrets and how the sounds of the earth can offer significant clues to find out the presence of truffles.

In the interview he is also explained the role of the dog in the search. In addition, the story of Cauda highlights the role of the moon and the incidence of the natural rhythms on the activities of the search.

The white truffle

The archive investigates white truffles, known for their taste and frivolous aspects, but not for their cultural characteristics which plasmed generations of truffle hunters. The research presents a substrate of knowledge documented through dozens of interviews: historical and anthropological elements, rituals and myths on this prized fungus, still considered nowadays a nocturnal mystery. The project was promoted by the University of Gastronomic Sciences, l’Athe National Association “Città del Tartufo”, the national centre for truffle research and the Cassa di Risparmio di Cuneo Foundation.
