Hunting truffle in Upper Langa

Bruno Walter, born in 1963, is a truffle hunter of Murazzano. He began his activity when he was a child, having a dog as a gift at the age of 14 years. Since then he has continued the activity, using always female dogs. Describing this element he emphasizes it is easier to train female dogs than male dogs, who are "more stubborn."


In the interview explains the timing of the collection that extends throughout the year, given the presence of different varieties of truffles. He also explains the best hours for the search.


He highlights the not easy relationship with other truffle hunters and the practice of poisoning dogs, a practice that he completely rejects as "you may have something to say with the owner, who does not understand, but it's not a dog's guilt."

The white truffle

The archive investigates white truffles, known for their taste and frivolous aspects, but not for their cultural characteristics which plasmed generations of truffle hunters. The research presents a substrate of knowledge documented through dozens of interviews: historical and anthropological elements, rituals and myths on this prized fungus, still considered nowadays a nocturnal mystery. The project was promoted by the University of Gastronomic Sciences, l’Athe National Association “Città del Tartufo”, the national centre for truffle research and the Cassa di Risparmio di Cuneo Foundation.
