Giovannina Sarra

The DOP saffron of Aquila

 Giovannina Sarra, interviewed in 2012 by two students of University of Gastronomic Sciences, lives in Navelli, a town in Aquila province. This area is very well-known for its saffron, a plant that has been locally cultivated for over 600 years.

Giovannina Sarra has grown and harvested this precious spice for over forty years. In the interview, she explains the entire production process of the saffron.Moreover, she also touches other themes, by telling a legend about the birth of the saffron, its early culinary uses, the history of the Cooperativa dell' Altopiano of Navelli and some theories about the origins of Milanese rice.
