Guglielmo Levet
History and tradition in Val Varaita
Guglielmo Levet and his wife Caterina Martin were interviewed by the students of the University of Gastronomic Sciences in 2012. They tell the story of their lives and speak about the history and traditions of the valley; a valley they left when they were twenty year old.
Guglielmo, after the draft and traveled in Northern Italy, moved to Carmagnola where worked in a farm, growing and selling vegetable in Turin.
After 40 years of works, the couple finally went back to their native village, in the house where they live at the moment, the same house where Guglielmo spent his youth.
In the interview the secret receipt of ravioles, a local type of pasta, is revealed.
Moreover, Caterina shows the student her liquors and explains the techniques needed for their production.
Finally, Guglielmo and Caterina describes local feasts and practices that characterized the valley in the early decades of Twentieth century.
