The student of the University of Gastronomic Sciences conducted the interview to Jari Nicoletta, owner of Nicoletta firm, a firm specialized in cheese-making.
In 2003, Jari Nicoletta becomes the head of the firm that was previously own by his grandparents. Together with his father and uncle, he decide to continue his family's enterprise, aiming at expanding the business and make the products be known outside the Canavese region. They produce alpine cheeses, coping with the difficulties that their territory present. In the interview, Jari describesof these problems and their possible solutions.
Despite the problems, Jari is moved by a deep passion for his work, his land and animals. These are the main reason that push his to get up at 6 every morning, happy to work. However, the future for any small firm in Canavese region is still uncertain.
