Emanuele Cini The Quilombolas of Sao Pedro
From rise to cous-cous
The Quilombolas community lives in the small village of Sao Pedro, in the Ribeira valley in the state of Sao Pablo in Brasil. They were visited by the students of the University of Gastronomic Sciences in 2011.
In the video, the chief of the community shows their cultivated fields. They are used for the cultivation of rice. The video shows the praparation of the cous-cous the community makes from rice.
