Paolo Ciapparelli is the president of the Association Produttori Valli del Bitto storico, an association that was created to promote the traditional cheese of Val di Albaredo and Val Gerola. Paolo Ciapparelli was interviewed by the students of the University of Gastronomic Sciences.
The Bitto cheese is one of the traditional cheeses of Lombardy. The cheese is produced in Sondrio province, in alpine cottages, between 1400 to 2000 high.
