The importance of alpine biodiversity in Valtellina

Patrizio Mazzucchelli is a farmer and small food producer in Valtellina. He was interviewed by the students of the University of Gastronomic Sciences during their study trip in th region.

He speaks about the particularities of Valtellina gastronomomy and points out the importance of the protection of local biodiversity. This work is done thanks to a Swiss foundation that protect alpine rare species used in the local dishes. 

In the interview, he explains the importance of those associations involved in the collection and preservation of native seeds and the hostile role played by public institutions in this field.
