
Giovanni Valmacco
Memories of a water-carrier
Giovanni Valmacco, born in 1931, is a former farmer and waterman. For the Granaries of Memory of the Granaries, he recalls aspects of his past profession and the world of rice fields.
He explains his old profession of rice field "digger keeper", who builts and manages the irrigation channels of rice fields.
He remembers the wildlife that inhabited the rice fields in the mid twentieth century (ie. tenches, carps, eels, frogs), explaining how it contributed not only to the cultivation but also to the diet of the pesants. In this regards, he illustrates some traditional recipes: soused carps, fried frogs and green souce frogs.
