A visit to the Slow Food presidium of the Juçara palm heart
In 2011, the students of the University of Gastronomic Sciences visited the Guardanì community of Silveira. They are part of the Slow Food presidium of the juçara palm (Eutherpes edulis), an endangered species of palm used for the production of palmito.
The video shows the daily activities of the community that is led by Adolfo Timótio ( Verá Mirim Miri in Guarani language) and their work to protect and process the palm.
