Traditional food of Puerto Rico

Interviewed in 2014, Jorge Mendez is a chef and a student of the University of Gastronomic Sciences.
Despite his young age Jorge knows and appreciates the traditional food of his country, Puerto Rico. The cousine of this country has its roots in the colonial period and, at the present, sheds light on the food history and the cultural role played by food in the island.
