Antonio Previdi

Trattoria Entrà

Antonio Previdi, born in 1973, welcomes you into his Trattoria Entrà with familiarity and warmth. Most arrive at his restaurant thanks to the word of mouth of his regular customers, who are happy to give very precise details about the road, the place and the menu. After following a labyrinth of intricate roads in Finale Emilia, a region of the lower altitude of the Modena Plain, the restaurant is discovered almost by accident, signposted by an arrow and a small symbol of crossed cutlery.

On March 8, 1969, two days after their marriage, Antonio's parents began their management of the restaurant. Elvira, Antonio' s sister, joined her mother in the kitchen as soon as she was able to start work, and she is still there today. Antonio, instead, manages the dinning room of 14 tables –a number that has remained the same since 1982, with no plans to increase. The menu offers a limited number of courses in order to maintain a balanced relationship between the ability to produce and service times, but it is varied each evening. The wine cellar, alongside the restaurant, reserves a selection of the best Lambrusco of the territory, as well as national and international wines.

Trattoria Entrà joined the Alliance Between Italian Chefs and Slow Food Presidia in 2009 - an extensive Slow Food Italy network, in which chefs form relationships with Slow Food Presidia producers and commit to cooking and promoting their products.
Antonio Previdi was interviewed in 2012.
