 Interviewed in 2007,  Isidoro Riboldi describes the making of the Tipico Lodigiano cheese. Isidoro, a delicatessen seller from 1948 to 2000, shows the scratching of Lodigiano cheese and explains the role of this technique as a fundamental part of the preservation of the cheese round.
